- Take four medium-sized potatoes, cooked until tender and mashed to perfection.

1 cup mixed vegetables (carrot, peas, cauliflower), finely chopped

- 1 large onion, finely chopped

- 1 large tomato, finely chopped

- 4-5 garlic cloves, finely chopped

- 1 inch piece of ginger, grated

- 2-3 green chilies, finely chopped

- 2 tbsp pav bhaji masala

- 1 teaspoon red chili powder

- 1 teaspoon turmeric powder

- 1 teaspoon cumin

- salt to taste

- butter for frying

Fresh coriander - for garnishing

Pav buns for serving





Instructions:

1. Heat one tablespoon butter in a large pan or kadhai on medium heat. Add cumin and let it crackle.

2. Add minced garlic, grated ginger and green chillies to the pan. Fry for a minute till the raw aroma disappears.

3. Add finely chopped onion and cook till it turns golden brown.

4. Now add finely chopped tomatoes to it and cook till it becomes soft and mushy. Keep stirring in between to avoid sticking.

5. When the tomatoes are cooked, put the mixed vegetables in the pan. You can use a combination of carrots, peas and cauliflower. Shake well to mix ingredients.

6. Sprinkle some salt, red chili powder, turmeric powder and pav bhaji masala. Mix everything well, making sure the spices coat the vegetables evenly.

7. Add some water to the pan, cover and let the vegetables cook on low heat till they become soft. Stir in between to avoid burning.

8. When the vegetables are cooked, add mashed potatoes to the pan. Mash them further using a potato masher or the back of a spoon. Mix them well with the vegetables, ensuring a smooth consistency.
